Medea

Medea is the daughter of King Troad in Dragon Quest 8: Journey of the Cursed King. Through pretty much the whole game, she is a horse. Yes a horse, but a few times in the game she transforms back into a human. Her whole purpose in the game is just to provide a few interesting story parts, for instance, she gets stolen in one part of the story.
